The purity and quality of raw honey are closely related to its density, which is commonly measured using the Baumé scale (Bé). Tested at 20°C, this scale reflects the concentration of solids in honey — the higher the value, the lower the water content and the richer the honey.

A higher Baumé value indicates thicker, more mature honey, as the bees have spent more time naturally reducing moisture during the production process.

What the Baumé Scale Indicates:

  • Higher density: Less water content, thicker texture
  • Greater maturity: Bees have fully developed and ripened the honey
  • Better preservation: Lower moisture helps prevent fermentation
  • Higher quality: Within the same type of honey, higher Bé usually indicates superior quality

International standards classify honey into Grade 1 and Grade 2. Honey with a Baumé value above 41.5 is considered Grade 1.

Honey with a Baumé value of 42 typically contains around 19% water, indicating a well-ripened and stable composition.

Sourced from the remote high mountains of Guizhou, China, this honey is harvested from wild cliff hives rather than farmed environments. Beekeepers must manually climb steep cliffs to collect it, making the harvest extremely limited and rare.

The bees forage in untouched, pollution-free environments, gathering nectar from diverse wild flowers. This results in a raw honey that is naturally pure, concentrated, and rich in character.

Texture, Taste & Crystallization:

This raw honey has a naturally sweet taste, without sourness or bitterness, and carries a rich, full-bodied honey aroma.

Crystallization at the bottom of the jar is completely natural, especially when stored in cooler temperatures. This occurs when glucose forms crystals over time.

Honey with lower water content tends to crystallize more easily, which is often a sign of higher quality. In contrast, honey with higher water content crystallizes less and is generally considered less stable.

Observing natural crystallization is one of the simplest ways to assess the purity and maturity of raw honey.

质地 . 口感 . 结晶:

天然原蜜的质地与结晶状态,往往是判断蜂蜜品质的重要依据之一。 这款原蜜呈现自然纯净的甜味,不带酸涩或苦味,入口温润,伴随着浓郁而饱满的蜜香,在口中缓缓展开。

在较低温环境下,瓶底出现结晶属于自然现象,这是蜂蜜中的葡萄糖随时间逐渐形成晶体的过程,也被称为蜂蜜结晶(crystallization)。

一般来说,含水量较低的蜂蜜更容易产生结晶,这通常意味着蜂蜜浓度更高、纯度更好;而含水量较高的蜂蜜则较不易结晶,相对稳定性也较低。

因此,观察结晶状态,其实是判断原蜜纯度与成熟度的一种直观方式,也是分辨高品质蜂蜜的参考依据之一。
