To know the purity (quality) of honey, you can look at its Baumé scale (Bé) value.The Baumé scale is a way to measure how thick honey is, often called its “degree.” It shows the percentage of solids in the honey. The higher the concentration, the heavier the honey, and the higher the Baumé value. The standard test is done at 20°C.
What the Baumé scale means for honey:
- Shows honey thickness: A high Baumé value means the honey is thicker and has less water.
- Shows honey ripeness: A high Baumé value means the honey is more mature, because the bees spent more time making it and removed more water.
- Shows honey quality: In the same type of honey, a higher Baumé value usually means better quality. Ripe honey keeps longer and has more nutrition.
- Grades of honey: International standards divide honey into Grade 1 and Grade 2. Grade 1 honey usually has a Baumé value above 41.5.
- Baumé value and water content: A higher Baumé value means lower water content. For example, honey with 42 Bé usually has about 19% water.
Bloom & Blossom Raw Honey has a Baumé value of 42–43, which is Grade 1 by international standards. It comes from the remote high mountains of Guizhou, China. This raw honey is not farmed. Beekeepers must climb to high cliffs by hand to collect it. The work is dangerous, so the amount collected is very small, making it rare. The wild bees live in clean, untouched areas and gather nectar from pure, pollution-free flowers. This makes the honey very pure.
Our raw honey tastes sweet, not sour or bitter, and has a strong honey fragrant. It has a lot of crystals at the bottom of the jar, especially if kept in a cool place. Crystallization is natural — it happens when the glucose in honey forms solid crystals. Honey with less water crystallizes more easily, while honey with more water does not crystallize as much. A simple way to check honey quality is to see if it has crystals.Crystallized honey with low water content is considered high quality, while the opposite is considered lower quality.

Bloom & Blossom的高山懸崖野蜂蜜,波美度為42至43度,屬於國際標準中的一級品,產自地廣人稀的中國貴州省偏遠高山地區。與人工養殖所得的蜂蜜不同,野蜂蜜須由採蜜農徒手攀爬至高山懸崖邊採收,由於採收風險極高,因此所得極少,十分珍稀。此外,生活於人跡罕煙環境的野蜂,平日所採之蜜源皆純淨無汙染,因此所造野蜂蜜也更為純淨。
我們的高山懸崖野蜂蜜口味偏甜,不酸也不苦,帶有濃郁蜂蜜香氣。瓶罐底下含有大量沉澱結晶,如存放於陰涼或冷處,結晶體更為明顯。蜂蜜結晶是蜂蜜的一種自然現象,指的是蜂蜜中的葡萄糖析出形成固體結晶。蜂蜜結晶與含水量低有直接關係,含水量低的蜂蜜更容易結晶,而含水量高的蜂蜜則較不易結晶。因此,一般大眾判斷蜂蜜品質的簡易方法就是觀察是否有結晶體。
